This macaroni salad is a staple when feeding a crowd. It's easy, light, and delicious. Mema had it at her bridal shower so it's been in the family for a long time. I think my mom made it for my bridal or baby shower, too (I need to check on that). The recipe uses miracle whip salad dressing instead of mayonnaise which gives it a sweet, tangy favor. I made a double batch (1 lb) this week for an employee training session and the team like it.
Bridal Shower Macaroni Salad
Ingredients
8 oz. med. size elbow macaroni
1/2 c. Kraft Miracle Whip salad dressing (amount depends on personal taste)
1 or 2 finely diced celery (we normally leave out because Erica dislikes)
1 med. finely diced onion
1 med. chopped tomato or halved grape tomatoes
1 chopped green or red pepper (mom likes red)
salt and pepper to taste
Directions
Boil water, add macaroni, cook until done, drain. Cool macaroni, add most of Kraft miracle whip salad dressing, peppers, celery, onion, salt and pepper. Mix well. Gentle fold in tomato. Refrigerate until cold. Mix in remaining miracle whip salad dressing. Then serve.
Note - We often double the recipe to make a pound of macaroni and use less miracle whip.
with all my love,
