Butter-Nut Snowball Cookies

A rich, crispy cookie.  Yields about 6 dozen.

2 sticks butter
1/2 cup sugar
2 Te vanilla
2 cups sifted flour
1/2 Te salt
2 cups finely chopped pecans
powered sugar

Cream butter, sugar, and vanilla until fluffy. Sift flour with salt.  Add to cream mixture. Add pecans and mix well. Roll into 1 inch balls. Place on cookie sheet.  Bake in 325 oven for about 20 minutes. DO NOT BROWN. Cool and then roll cookies in powered sugar.  You can change recipe to cocoa-nut balls by adding 1/4 cup of cocoa.

These are one of my favorite Christmas cookie. Making them with Mema was fun because it involved using the nut grinder and getting messy while rolling the cookies into white fluffy powder.  I prefer to eat these cookies on baking day.  Enjoy!

with all my love,
